Indulge in the vibrant flavors of pickled beets, a nutritious and delicious addition to any meal. With just a few simple ingredients and easy steps, you can create a mouthwatering side dish that’s perfect for any occasion.

To start, gather eight large, fresh beets and prepare them for cooking. Scrub the beets clean, then trim the tops to about an inch. Place them in a Dutch oven, cover with water, and bring to a boil. Reduce the heat to low and simmer for 25-30 minutes, or until the beets are tender.

Once cooked, let the beets cool, then peel and slice them. Set them aside in a basin.

Next, create the pickling mixture by combining one cup of vinegar, half a cup of sugar, one and a half teaspoons of whole cloves, one and a half teaspoons of whole allspice, and half a teaspoon of salt in a small saucepan. Bring the mixture to a boil, stirring occasionally, and let it simmer for about five minutes.

Pour the hot pickling mixture over the sliced beets and refrigerate for at least an hour to allow the flavors to meld. Before serving, drain the excess liquid.

These sweet and tangy pickled beets are not only a treat for your taste buds but also packed with nutrients. Beets are rich in fiber, vitamins, and antioxidants, making them a healthy addition to your diet. Enjoy your homemade pickled beets as a side dish, topping for salads, or snack.

With this simple recipe, you can savor the delicious taste of pickled beets while reaping their numerous health benefits. Give it a try and discover a flavorful way to incorporate more nutrients into your meals.
